Taco Pie Recipe

With classic Mexican flavor and a tender, cheesy breading on top, our recipe for Taco Pie is a great choice to make for the kids. This recipe comes together so quickly and easily that even a middle school aged kid can learn to make this. If you have a kid who is just a little picky, chances are good that they will enjoy eating this Taco Pie for dinner. And, even the adults will probably enjoy this recipe too.

Ingredients

  • 1 pound ground beef
  • 1 ten ounce can of diced tomatoes with green chilies 
  • ¼ teaspoon garlic powder
  • 1 tablespoon chili powder
  • ½ teaspoon paprika
  • ¼ teaspoon onion powder
  • 1 ½ teaspoons cumin
  • ½ teaspoon salt

Ingredients for Pie Topping:

  • 1 cup flour
  • ¾ cup baking powder
  • ½ teaspoon salt
  • 2 tablespoons butter
  • 3 pcs eggs 
  • 1 cup milk
  • 1 cup cheddar cheese

Instructions
 

  • Preheat your oven to 350 degrees. Spray a nine-inch pie pan with cooking spray and set it aside.

  • In a large skillet over medium heat, brown the ground beef and chop it up into small bits with a spatula. Cook and turn the meat until it is completely browned and no more pink remains.

  • Drain the grease from the meat. Stir the garlic powder, chili powder, onion powder, paprika, cumin, and salt into the meat. Put the meat into the prepared pie pan. Open the can of diced tomatoes and drain the juices from the tomatoes. Stir the tomatoes into the ground beef.

  • Sprinkle the cheddar cheese over the top of the meat and tomato mixture.

  • In a small mixing bowl, stir together the flour, baking powder, and salt. Use a pastry blender or a fork to cut the butter into the dry ingredients. Continue mixing until the butter is in tiny pieces and well distributed throughout the flour mixture. 
  • Crack the eggs into a small bowl or a coffee cup. Beat them with a fork until they are fully combined. 
  • Stir the eggs and milk into the flour mixture, stirring until most of the lumps are dissolved. This mixture will be rather runny, kind of like pancake batter.
  • Pour the flour mixture over the top of the pie, spreading it around until most of the meat is covered with the flour and egg mixture. 
  • Put the pie into the center of the oven and bake it for 25 to 30 minutes or until the pie is golden brown on top. If you poke a knife into the top of the pie, it should come out clean.

  • Scoop the pie out into bowls and serve immediately.

Notes

Another great thing about this recipe is that you can easily make components of it ahead of time. Many people cook several pounds of ground beef over the weekend in preparation for meals throughout the week. The meat is then drained and allowed to cool. After cooling, the beef is separated into 1 pound portions and spooned into zip top freezer bags. The bags can then be labeled and frozen. Throughout the week, you can use these precooked bags of beef to quickly get dinner on the table. Things like spaghetti, soup, or sloppy joes can be created from precooked beef and the first step of the recipe is already done when you precook.
If you have some precooked ground beef, this recipe will come together in a snap. In fact, you may be able to get this recipe in the oven in less than ten minutes if the beef is already cooked.
If you know that things are going to be rushed in the evening, you can do a bit of the prep work for dinner in the morning. Stir together the cooked and drained ground beef with the seasonings. Spread this in the baking pan. Add the diced tomatoes, stirring to combine with the beef and sprinkle the cheese on top. Then cover the pie pan with plastic wrap and put it into the refrigerator until evening. When you get home, just mix up the flour, baking powder, salt, butter, milk and egg mixture and pour it over everything. Pop the pie in the oven and bake as directed.
Another shortcut that might be useful in making this recipe is to use a baking mix like Bisquick rather than the flour, butter, baking powder, and salt. Just measure about a cup of the baking mix and proceed with the recipe as directed. 
With a bit of planning and working ahead of time, dinner will be ready quickly and everyone will be ready to dig into our delicious Taco Pie recipe.
