Air Fryer Stuffed Mushrooms Recipe

This recipe is totally delicious. Even people who are not crazy about mushrooms will probably love these. They are packed with two different kinds of cheeses and seasoned with garlic and chives. In fact, the mushroom itself is more of a conduit for the cheesy filling than the star of the appetizer.

Equipment

  • 1 Damp Cloth or a Paper Towel
  • 1 Paring Knife
  • 1 Electric Mixer
  • 2 Mixing bowl
  • 1 Teaspoon to Scoop
  • 1 Shredder
  • 1 Air Fryer
  • 1 Spray
  • 1 Dinner Plate

Ingredients
  

  • 1 pound whole white button mushrooms
  • 8 ounces softened cream cheese
  • 3 tbsp sour cream
  • ½ cup shredded cheese, whatever variety you prefer
  • ½ tsp garlic powder
  • ½ tsp salt
  • pinch pepper
  • Chopped chives or bacon bits, for topping
  • Oil spray

Instructions
 

  • Take a damp cloth or a paper towel and gently remove any dirt from the mushrooms. If you must rinse them under running water to clean them, be sure that you dry them well. The recipe needs dry mushrooms.

  • Use a paring knife to remove the stems from the mushrooms. You may need to use the tip of the knife to dig out a hollow in the mushroom cap.
  • Use an electric mixer to blend the cream cheese until it is smooth and creamy. Add the sour cream, the garlic powder, the salt, and the pepper. Mix again until all the ingredients are combined.
  • Use a teaspoon to scoop the filling mixture into the mushroom caps.

  • Put the shredded cheese into a wide, shallow bowl.
  • Hold the mushrooms upside down and press the cream cheese mixture into the shredded cheese to coat the mound of the cream cheese mixture with shredded cheese.
  • Top each mushroom with a pinch of chives or bacon bits.
  • Preheat the air fryer to 375 degrees for about 3 minutes. Spray the inside of the air fryer with cooking oil.
  • Put the mushrooms into the air fryer in a single layer and spray them with a light coating of cooking oil. You may need to cook these in two separate batches.
  • Cook the mushrooms for 5 to 6 minutes.
  • Let them cool for a few minutes before serving because the filling will stay very hot even after the outer cheesy coating is cool enough to touch and handle.
  • Serve the mushrooms.

You can make these stuffed mushrooms ahead of time. Just prepare the recipe all the way up to the step where you pop them into the air fryer. At this point, put the mushrooms into a container with a tightly sealing lid and store them in the refrigerator for up to three days. You may have to add a few more minutes to the cook time, but they will turn out just fine.
When you wash the mushrooms, you do not want to rinse them under running water. This will make the mushrooms soggy as they cook instead of crispy because the mushrooms will absorb some water. Instead, take a damp paper towel and gently wash the mushrooms of any dirt, paying close attention to the undersides of the mushrooms where the dirt tends to be trapped. If your mushrooms are really dirty, and you feel that you have to rinse them, turn them out on an absorbent towel afterward and dry them well before you stuff them. You may even want to allow them to air dry for a few hours before you stuff the mushrooms.
For toppings, you can use chives or bacon or even both. Just sprinkle a small pinch of these toppings on the mushrooms right before you place them in the air fryer. Additionally, if you really love the flavor of onion you can add a tablespoon of diced onion to the cream cheese mixture before you stuff the mushrooms. Other flavors that you might enjoy adding to the cream cheese mixture might include a bit of taco seasoning, some Worcestershire sauce, or maybe even some hot sauce.
You can choose whatever kind of cheese you like best. A sharp cheddar is delicious, and a smoked provolone would be out of this world. We used Colby jack cheese for a very mild flavored stuffed mushroom. To cover the mushrooms evenly with cheese, just put the cheese in a shallow bowl and dip the mushrooms into the bowl. If you just try to sprinkle the cheese, less of it will stick than you would like.
