Butterscotch Self Saucing Pudding

Are you in the mood for something sweet and homemade, but you do not want to spend a lot of time in the kitchen making a big mess and preparing a complicated recipe? Ingredients
  

Cake Ingredients:

  • ¼ cup Brown sugar
  • 1 tsp Molasses
  • 1 ¼ cup Flour
  • 2 ½ tsp Baking powder
  • ½ cup Butter, melted
  • 1 Egg
  • ½ cup Milk any variety of milk that you prefer
  • 4 tbsp Corn syrup

Sauce Ingredients:

  • ¾ cup Brown sugar
  • 1 tbsp Molasses
  • 4 tbsp Flour
  • 2 cups Boiling water

Instructions
 

  • Turn your oven on to preheat to 350 degrees. Spray a 2 quart baking dish with cooking spray and set it aside.
  • To prepare the butterscotch sauce, stir together the sugar, molasses, and flour together in a small bowl. Set this aside and move on to making the cake portion of the recipe.

  • In a medium sized bowl, stir together the sugar, flour, and baking powder. Add the melted butter, egg, milk, molasses, and corn syrup. Whisk these until a smooth batter is formed. Use a rubber spatula to scrape the batter into the prepared baking pan, smoothing the top.

  • Sprinkle the butterscotch sauce mixture over the top of the batter in the pan. Do not stir.

  • Hold a tablespoon upside down over the top of the pan and slowly pour the boiling water over a large spoon into the pudding pan. This will help keep the water from disturbing the layers in the pan. Do not stir the mixture together.
  • Put the baking pan in the oven and bake the pudding for about 40 minutes. Let the pudding cool in the pan for about 20 minutes. Scoop out the pudding along with the butterscotch sauce into dessert dishes and top it with a scoop of ice cream or sweetened whipped cream.
  • Store leftovers covered with aluminum foil or plastic wrap in the refrigerator for up to four days. To serve, reheat it in the microwave for about 45 seconds per serving.

This is one dessert that is very surprising to make. The beginning of the recipe seems pretty straightforward, mixing the batter with typical ingredients like butter, flour, and baking powder. Then, you do something that is a bit unexpected. You will sprinkle the batter with a mixture of flour, sugar, and molasses. Then, something very odd occurs. You will take two cups of boiling water and pour it over the whole baking pan. To keep the water from splashing and disturbing the layers in the cake pan, you should pour it over a spoon held upside down.
At this point, your dessert will look like a sloppy, gloppy mess, with water dumped all over the batter. But, it is still okay! Go ahead and pop the whole thing in the oven and then the magic will happen. As the pudding bakes, the cake batter will rise to the top and the butterscotch sauce mixture will combine with the water. The cake batter will bake into a fluffy pudding cake that is floating atop a generous portion of delicious butterscotch sauce. What went into the oven looking like a disaster turns into a golden brown, fragrant, and tasty treat.
The name of this dessert might be a bit confusing if you are from the United States. For Americans, a pudding is generally a milk-based custard type dessert that is smooth, cool, sweet and creamy. However, in Great Britain and other countries with a British history, a dessert pudding is a soft, gooey cake. A self-saucing pudding is a dessert like this one. It has a cake layer atop a sweet sauce in the dish underneath the cake.
The most common self-saucing pudding recipe is a chocolate or hot fudge version of this recipe. However, you can also find lemon-flavored self-saucing puddings, caramel-flavored ones, and even fruit-flavored puddings. All of these recipes are wonderful, quick, and easy desserts that you and your family will enjoy.
