Caramel Apple Pie

Ingredients:

For The Crust

  • 3 Cups all-purpose flour and some sprinkled on your work surface
  • 1 Cup butter, cut into ½” pieces
  • 2 Tablespoons granulated sugar
  • 1/2 teaspoon kosher salt
  • 1 Tablespoon apple cider vinegar
  • 6 Tablespoon ice water (or more, if necessary)

For The Filling

  • 3 1/2 lbs. (+/- 7 apples) Assorted apples (Honey Crisp, Granny Smith, Gala) peeled, cored, and thinly sliced (about seven apples)
  • 1/4 cup packed dark brown sugar
  • 2 Tablespoons freshly squeezed lemon juice
  • 1 Teaspoon cornstarch
  • 1 teaspoon cinnamon
  • 1/2 Teaspoon of pure vanilla extract
  • 1/4 teaspoon kosher salt
  • 1/2 Cup of caramel, plus more for serving
  • 1 Egg (beat with 1 tablespoon water for egg wash)
  • Coarse sugar, for sprinkling
  • Ice cream, for serving

Instructions:

  1. Make the crust: Place the flour and butter into the freezer for 30 minutes before starting the crust process.
  2. In a large bowl, combine the sugar, flour, and salt. Add butter and a pastry cutter or your hands to cut the butter into the flour mixture until they are pea-sized and some slightly larger pieces have formed.
  3. Add the vinegar and ice water to the mixture (1 tablespoon at a time) until the dough comes together. The dough should be moist (not wet) and sticky (test the stickiness by squeezing the dough with your fingers). The mixture should be crumbly.
  4. Place the dough onto a flour-dusted surface. Form the dough into 2 balls (equal size), and flatten them into disks (there should be little to no cracks).
  5. Cover the dough with plastic wrap and refrigerate until the dough is very cold (no less than two hours, preferably overnight).
  6. Preheat your oven to 400° and place a large baking sheet on the middle rack.
  7. Place a large skillet over medium heat and brown sugar, cornstarch, apples, lemon juice, cinnamon, and salt. Continue cooking until the liquid has thickened and the apples are tender (12 to 15 minutes). Let it cool down while you roll out the dough.
  8. On a flour-dusted surface, roll out one of the dough discs into a 12” circle. Transfer the crust to a 9” pie plate and gently press it to fit. Trim the edge to a 1” overhang and tuck it under itself. Crimp the edges. Evenly layer all the apples on top of the crust and pour the caramel over the apples.
  9. Roll out your second dough disc into a 12″ circle and cut it into 10 strips—Lay 4 strips over the apples. Fold back the first and third strips and place the fifth strip over the apple opposite.
  10. Lay the folded-back slices over the fifth strip. Fold the second and fourth strips back and repeat the lattice top with the remaining crust. Trim all the strips and press them into the crimped crust. Freeze the crust for 15 minutes (until crust is well chilled).
  11. Brush the chilled crust with your prepared egg wash and sprinkle it with coarse sugar. Place the pie plate onto the hot baking sheet and bake the pie until the crust is very golden and the filling bubbles (+/- 50 minutes).

If the crust starts to get dark too quickly, cover it loosely with foil to prevent it from burning. Let it cool on a wire rack for at least 2 hours before serving.

Serve with more caramel and ice cream, if desired.

Apple Pie Bars

Ingredients:

For The Crust

  • Cooking spray
  • 1 Cup of butter, softened
  • 1/2 Cup of granulated sugar
  • ¼ Cup of packed brown sugar
  • 2 1/2 Cups all-purpose flour
  • 1/2 teaspoon kosher salt

For The Filling

  • 6 Apples (cored, peeled, and sliced into wedges)
  • Juice of 1/2 a lemon
  • 1/2 Cup of packed brown sugar
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of pure vanilla extract
  • 1/2 teaspoon kosher salt

For The Topping

  • 1 1/2 cups of all-purpose flour
  • 1 Cup of chopped pecans
  • 1 Cup of packed brown sugar
  • 1/2 Teaspoon of kosher salt
  • 3/4 Cup of butter, melted
  • Caramel for serving

Instructions

  1. Preheat the oven to 350° F, line a 9″-x-13″ pan with parchment, and grease it with cooking spray. Use a hand mixer to beat the sugar and butter in a large bowl until fluffy and light. Add the flour and salt and mix it until just combined.
  2. Press the dough into your prepared pan (about 1/2” up the sides). Bake the crust until lightly golden (20 minutes).
  3. Toss brown sugar, vanilla, cinnamon, salt, apples, lemon juice in a large bowl. Spread the apples over the crust.
  4. In a medium-sized bowl, whisk together the brown sugar, pecans, salt, and flour and stir in the melted butter until coarse lumps form. 
  5. Sprinkle the crumbs over of the apples and bake until the top is golden and the apples are soft (about 1 hour).
  6. Let the pie cool for at least 15 minutes before slicing it into squares. Give it a good drizzle of caramel before serving.

Bacon-Weave Apple Pie

Ingredients:

  • 1 Pack store-bought pie crust
  • 3 lbs. Apples (peeled, cored, and cut into wedges)
  • 1/2 cup sugar
  • 2 Tablespoons flour
  • 1 Tablespoon lemon juice
  • 1/2 Teaspoons cinnamon
  • A pinch of kosher salt
  • 10 Pieces of bacon (par-cooked)
  • 1/4 cup brown sugar

Instructions:

  1. Preheat the oven to 350°F. Grease the pie pan with cooking spray.
  2. Stir the apples, flour, lemon juice, cinnamon, sugar, and salt together.
  3. Lay your pie crust into your pie pan and crimp the edges all around. Pour the apples onto the pie crust and top it with bacon lattice. Trim the edges of the bacon that extend past the crust.
  4. Sprinkle brown sugar over the bacon and cover it with aluminum foil—Bake for 1 hour. Remove the aluminum foil and bake the pie uncovered for another 15 minutes until the bacon is crispy.
  5. Let the pie cool before serving.

Ingredients:

  • 1 Cup of whole pecans
  • 1/2 Cup of granulated sugar
  • 4 Tablespoons of melted butter
  • 1 (14.1-oz) Packet of refrigerated pie crusts

For Cheesecake Layer

  • 2 (8-oz.) Packs of cream cheese
  • 1/2 Cup of granulated sugar
  • 2 large eggs
  • 3 Tablespoons of all-purpose flour
  • 2 Teaspoons of pure vanilla extract
  • 1/2 Teaspoon of salt

For Apple Pie Layer

  • 3 large apples (peeled, cored, and sliced)
  • Juice of ½ a lemon
  • 2 Tablespoons of cornstarch
  • 1 Teaspoon of ground cinnamon
  • 1/4 Teaspoons of ground nutmeg (optional)
  • Vanilla ice cream for serving (optional)
  • Caramel sauce for serving (optional)

Instructions:

Preheat the oven to 375°. Whisk the sugar and melted butter together in a medium-sized bowl. Spread in an even layer of the butter mixture on the bottom of a 9″ pie plate.

Sprinkle the pecans over in a single layer. Unroll one of the pie crusts and drape it over the pie plate. Press it gently to fit the plate. Trim the edges to the edge of the pie dish.

For the Cheesecake Layer

Use a hand mixer to beat the sugar and the cream cheese in a large bowl until smooth. Beat the eggs (one at a time), followed by the vanilla, flour, and salt.

For the Apple Pie Layer

In a large bowl, toss the lemon juice, nutmeg, cinnamon, cornstarch, and apples.

Assemble the Pie

  • In an even layer, spread the cheesecake mixture on the bottom of the pie crust. Add the apple mixture and make it level with a spoon. Cover the apples with the remaining crust and trim off the excess dough. Crimp the dough using the tines of a fork. Use a paring knife to make 4 small cuts in the middle of the pie.
  • Place the pie on the baking sheet and bake for 45 to 50 minutes until the apples are cooked through, and the crust is golden.
  • Allow the apple pie to cool down for at least 10 minutes before you move it to another plate. Allow the apple pie to cool down to room temperature and transfer it to the refrigerator to chill for about 2 hours.
  • Top each slice with a dollop of ice cream and a generous drizzle of caramel before serving.

Apple Pie Cheesecake

Ingredients:

For the Crust

  • 3/4 Cup of graham cracker crumbs
  • 1/2 Cup of rolled oats
  • 1/4 Cup of packed Truvia Sweet Complete Brown Sweetener
  • 6 Tablespoons of butter, melted

For the Cheesecake

  • 2 (8-oz.) Blocks of cream cheese softened
  • 1/4 Cup packed Truvia Sweet Complete Brown Sweetener
  • 1/4 cup Truvia Sweet Complete Granulated All-Purpose Sweetener
  • 2 large eggs
  • 2 teaspoon of pure vanilla extract
  • 2 Tablespoons of cornstarch
  • 1/2 Teaspoons of cinnamon
  • 1/4 Teaspoons of ginger
  • 2 medium apples (peeled, cored, and sliced)

For the Streusel Topping

  • 1/4 Cup of all-purpose flour
  • 1/4 Cup of rolled oats
  • 1/4 Cup of packed Truvia Sweet Complete Brown Sweetener
  • 1/2 Teaspoon of cinnamon
  • 2 Tablespoons of butter, melted

Instructions:

Make the Crust

Preheat the oven to 350°. Line two muffin pans with paper liners. Combine the oats, melted butter, sweetener, and graham cracker crumbs and spoon1 tablespoon of the mixture into each liner. Press it firmly to form a crust.

Make the Cheesecake

Use a hand mixer to beat the sweeteners and cream cheese together in a large bowl until smooth. Add the vanilla and eggs and beat to combine. Next, beat in the ginger, cinnamon, and cornstarch. Gently fold in the apples and divide the batter evenly amongst the crusts.

Make the Topping

In a medium bowl, combine the sweetener, cinnamon, melted butter, oats, and flour. Sprinkle the topping over the cheesecakes.

Finally, bake the cheesecakes until just set, and the topping is golden (20 to 25 minutes). Allow it to cool down to room temperature and refrigerate until chilled (no less than 2 hours).

Apple Pie with Salted Pecan Crumble

Ingredients:

For The Pie

  • 1 1/4 cups of all-purpose flour
  • 1/4 Teaspoon of kosher salt
  • 3 Tablespoons of cold, unsalted butter
  • 2 Tablespoons of cold vegetable shortening
  • 3 1/2 Tablespoons of ice water

For the Salted Pecan Crumble

  • 1 Cup of all-purpose flour
  • 2 Tablespoons of light-brown sugar
  • 2 Tablespoons of granulated sugar
  • 1/2 Teaspoon of kosher salt
  • 1/4 Teaspoon of ground cinnamon
  • 1 Cup of pecan pieces
  • 5 Tablespoons of cold, unsalted butter

For the Apple Filling

  • 1/2 Cup of granulated sugar
  • 2 Tablespoons of cornstarch
  • 1 1/2 Teaspoons of nutmeg
  • 6 Granny Smith apples
  • 1/2 Teaspoon of grated lemon zest
  • Confectioners’ sugar (optional)

For the Vanilla Whipped Cream

  • 1 Cup of cold heavy cream
  • 2 Tablespoons of confectioners’ sugar
  • Scraped seeds from a 1/2 split vanilla bean

Instructions:

Make The Pie Dough

  1. In a medium bowl, combine the salt and flour. Add the shortening and butter and toss gently until all the pieces are coated with flour. Use a pastry blender to cut the shortening and butter until the mixture resembles coarse crumbs.
  • Add the ice water (1 tablespoon at a time), drizzling over the flour mixture, and using a fork, toss the dough until it starts to hold together. Make the dough into a ball on a smooth surface. Wrap the dough in plastic and flatten it into a disc. Refrigerate for one hour

Make the Salted Pecan Crumble

  1. Combine 1/3 cup of pecans, salt, sugar, cinnamon, and flour in a food processor. Process until the pecans are ground. Then, add the butter and gently pulse until the mixture resembles crumbs.

Transfer the crumble to a medium-sized bowl. Add the remaining pecans and with your hands, squeeze and crumble the mixture to form bigger clumps. Refrigerate until it is ready to use          

  • Use two pieces of wax paper or a flour-dusted surface to roll the dough out into a 1/8″ thick and 12″ round. Next, fold the dough in half and ease it gently into a 9″ pie pan. Unfold the dough and let the pastry hang over the edge.

Trim the overhang to 1”. Fold under and crimp or flute the edge and place the shell in the refrigerator. Heat the oven to 350 degrees Fahrenheit.

Make the Apple Filling

In a large bowl, combine nutmeg, cornstarch, and sugar until blended. Add the zest and apples and toss until the apples are evenly coated.

Remove the pie shell from the refrigerator and spoon the apple filling into the shell. Sprinkle the crumble evenly over the top of the pie and gently press it into place. Place the pie on the baking sheet.

Make the Vanilla Cream

In a large bowl, beat heavy cream, scraped vanilla seeds, and confectioners’ sugar until you have soft billowy peaks.

Finally, bake for 1 ½ hour until the top is golden brown and the filling bubbles. Allow it to cool completely on a wire rack and dust the pie with confectioners’ sugar(optional).

Serve with vanilla cream.

Apple Custard Pie with Cinnamon Streusel

For The Filling

  • 1/2 Teaspoon of grated lemon zest
  • 1/3 Cup of dried cranberries
  • 4 Small Granny Smith apples

Instructions:

  • Prepare the Basic Pie Pastry.
  • Move the oven rack one third up from the bottom of the oven. Heat the oven to 425 degrees F.

Make The Cinnamon Streusel

Combine the flour, cinnamon, butter, and brown sugar. Use your hands to mix until big crumbs form. Stir in the walnuts.

Make The Filling

In a bowl, whisk the flour, salt, and sugar. Add the vanilla, lemon zest, egg yolks, and sour cream and whisk until smooth. Sprinkle the bottom of the pie shell (unbaked) with dried cranberries. Arrange the apples in a concentric circle on top of the cranberries. Pour the sour cream mixture over the apples. Sprinkle the streusel on top.

Finally, bake the pie for 15 minutes, reduce the heat to 350 degrees Fahrenheit, and bake for another 45 to 50 minutes until the apples are tender and the custard is set.

Allow the apple pie to cool completely on a wire rack before serving.

Snickerdoodle Cream Cheese Apple Pie

  • 1lb (1.5 oz) Pouch of Snickerdoodle Cookie Mix
  • 1/2 Cup of butter, softened

For The Cream Cheese Filling

  • 1 (8 oz) Package of cream cheese, softened
  • 1/4 Cup of sugar
  • 1 Tablespoon of flour
  • 1 Teaspoon of vanilla
  • 1 Egg
  • 11/4 Cups of apple pie filling, chopped
  • 1/2 Teaspoon of cinnamon

Instructions:

  • Preheat the oven to 350 degrees Fahrenheit. Grease a 9” glass pie plate.
  • Place the cookie mix into a bowl, add ½ Cup of butter and use a pastry blender until you have crumbs. Press the crumbs (2 cups) into the bottom and up the sides of the glass pie plate.
  • Bake the crust for 10 minutes and set it aside.
  • Add 1 tablespoon of melted butter to the rest of the crumbs and toss to combine.
  • Beat cream cheese until very smooth, and add the flour and sugar. Mix well. Add the egg and vanilla and beat the batter until smooth.
  • Place the apple pie filling into a bowl and add ½ teaspoon of cinnamon. Stir to combine the ingredients.
  • Next, evenly spread the cream cheese mixture into the crust.
  • Add the chopped canned apples over the cream cheese. Dont get too much of the thickening filling onto the cream cheese as it may cause it to become mushy.
  • Finally, evenly sprinkle the crumble mixture on top of the apples and bake the pie for 35 minutes until the top is a beautiful golden brown.

Allow the apple pie to cool completely and refrigerate for 3 hours before serving.
