Chicken Ingredients

  • 4 chicken Breasts
  • 2 tbsp Olive Oil or Another Cooking Oil
  • 1 tsp Paprika
  • ½ tsp Salt
  • ¼ tsp Garlic Powder
  • ¼ tsp Onion Powder

Cream Cheese Filling Ingredients

  • 4 ounces (Half a Block) Cream Cheese Softened at Room Temperature
  • ¼ cup Grated Parmesan Cheese
  • 2 tbsp Mayonnaise
  • 1 ½ cups Chopped Fresh Spinach
  • 1 tsp Minced Garlic
  • ½ tsp Salt
  • ½ tsp Red Pepper Flakes

Instructions
 

  • Preheat the oven to 375 degrees. Lightly spray a nine by thirteen baking pan with cooking spray. Set this aside as you prepare the rest of the recipe.
  • Drizzle the olive oil onto the bottom of the baking pan and roll the chicken breasts in the oil to coat.
  • Into a small bowl, measure out the paprika, salt, garlic powder, and onion powder. Stir these together to combine and then sprinkle the mixture over the chicken breasts, turning to season both sides of the meat.

  • Using a sharp knife, cut a deep slit into the side of each chicken breast. Remember that you will be stuffing the filling into this opening, so make sure it is large enough.
  • Now you can move on to making the filling mixture. Add the cream cheese, Parmesan cheese, mayonnaise, chopped spinach, garlic, and salt to a small mixing bowl. Use a wooden spoon to stir these ingredients together.

  • Divide the mixture into fourths and scoop about a fourth of the filling mixture into each chicken breast. Return the chicken to the baking pan and put it in the oven.

  • Bake the chicken uncovered for about 25 to 30 minutes. The chicken should test at 165 with an instant read meat thermometer. Make sure that you are testing the meat and not the cream cheese filling when you use the meat thermometer.

  • Serve the chicken hot and store the leftovers in the refrigerator, covered for up to three days. Reheat the chicken breasts in the microwave for about 30 to 60 seconds.
