There is nothing like the smell of fresh bread baking in your oven. Unless it is eating that same bread! If you haven’t yet dipped a toe into the current "no knead" bread baking trend, this recipe for No Knead Skillet Cheese Bread is a perfect way to start. It is crusty, cheese, and delicately flavored. Best of all, you don’t have to spend time kneading this bread. Just stir it up, let it rise two times, and then bake it.

  • Oven
  • Large Mixing Bowl

  • Clean tea towel
  • Very sharp knife or a razor blade
  • Spatula
  • Cooling rack


  • 2 cups warm water
  • 1 package of dry yeast
  • 1/2 teaspoon salt
  • 4 cups all purpose flour
  • 1/2 teaspoon onion powder
  • 1 1/2 teaspoon garlic powder
  • 1 cup shredded cheese
  • 2 tbsp olive oil, divided
  • teaspoon coarse salt
  • ½ teaspoon dried parsley


  • In a large mixing bowl, stir together the warm water and the yeast.
  • Add 1 cup of the flour and the salt to the yeast mixture and stir with a wooden spoon until fully combined.

  • Add the onion powder, garlic powder, and the cheese, stirring well. 
  • Add the rest of the flour, one cup at a time, stirring well after each addition.
  • Cover the bowl with plastic wrap and let it sit on the counter in a warm spot for about an hour. 
  • Add 1 tablespoon of your olive oil to an 8 inch cast iron skillet.

  • Holding the pan by the handle, rotate it so that you coat the bottom and sides of the pan with the oil.
  • After the initial rise time, dust your hands with a light coating of flour and use your hands to transfer the dough to the oiled skillet.
  • Pat the dough into a disk and cover the pan with a clean tea towel.
  • Put the pan in a warm place and let it rest and rise for half an hour. 
  • Preheat the oven to 400 degrees Fahrenheit. 
  • Using the remaining tablespoon of oil, drizzle the surface of the dough all over with oil.
  • Next, sprinkle the coarse salt and the parsley over the surface of the bread dough.
  • Use a very sharp knife or a razor blade, score the top of the dough with two slashes, criss-crossing one another.
  • Bake the bread for 30 minutes or until the top of the loaf is golden brown.
  • Remove the pan from the oven and use a spatula to release it on the sides.

  • Turn the loaf out onto a cooling rack. Let the bread cool for at least 20 minutes before slicing it. 
  • You can serve the bread warm, or you can eat it at room temperature as well.
  • Wrap leftovers tightly in aluminum foil and store them in the refrigerator for up to 5 days.


No knead bread doesn’t rely on kneading to develop gluten in the dough. Gluten is the stretchy proteins in a loaf of bread that capture gas bubbles and make the bread rise. In traditionally made bread, the kneading process develops the gluten so that the bread rises well. In no knead bread, the rising time helps the gluten develop.
