16 No-Bake Dessert Recipes

Even those of us who anticipate with childlike delight the rise of baked goods in the oven, those who truly love baking, have to admit that we’d like to skip a few steps sometimes.  No bake desserts offer a way to still serve a sweet homemade reward after a meal, even if you’re short on time or patience.  Actually, even if time were not a factor, something cool, creamy, and refreshing often fits the bill for exactly what we’re craving anyway.

Friends and family can usually pull out a few recipes to share around, but this recipe compilation showcases no bake desserts of every flavor and mood.  All are easy, convenient, and so tempting!

No Bake Chocolate and Peanut Butter Cheesecake

Chocolate Peanut Butter Cheesecake

This indulgent and smooth dessert tastes like it took hours to create, and because of the simple, fool-proof procedure, you can easily make it look like it took hours as well.  The crowd-pleasing combination of peanut butter and chocolate blends brilliantly with cheesecake into a restaurant-caliber dessert without having to gingerly monitor the delicate rise of cream cheese and egg filling.  Make a standard graham cracker crust, then pop chocolate chips in the microwave to melt and combine with cream cheese mixture.

The rich peanut butter topping is made similarly and mixed with confectioners’ sugar.  This convenient and decadent cake works wonderfully on any occasion.  Make it your own with fresh mint sprigs or other eye-catching touches.

No Bake Banana Split Dessert

A Bowl of Banana Split

This layered fruit and custard dessert takes all the best things about the hallmark ice cream sundae with its mountains of toppings and creamy flavors and allows you to eat it in any size portion, with no worries about melted ice cream soup.  Like the sundae, it can also be put together in minutes, with no baking, but keeps well in the fridge for days.

Starting with a graham cracker crust, you’ll spread on a cream cheese layer to represent creamy frozen dairy, and then pile on all the toppings everyone wants on their banana split: strawberries, sliced banana, and pineapple, as well as the sundae must-haves, whipped cream and chocolate syrup with a cherry.

No Bake Oreo Dessert

A slice of cookies and cream Oreo

Cookies and cream, a favorite ice cream flavor, has made its way into pies, fudge, candy bars, and many different snack foods, all because we all love it, and getting that flavor into as many foods as possible is a great idea.  A variation on this is the child-friendly Dirt dessert, where the crushed Oreo topping represents brown soil and gummy worms are strewn on top; it has even been photographed served in little terra cotta pots.

Most versions start with a crushed Oreo and butter crust, then add a thick layer made with vanilla pudding, cream cheese, whipped topping, and sugar.  More crushed Oreos on top invite all cookies and cream fans to dig in.

Low Carb Chocolate Lasagna (Sugar Free and No Bake)

Chocolate Lasagna Topped With Cheese

When I find chocolate lasagna on the dessert menu at a restaurant I’m tempted to simply order that in lieu of an entrée, and a few times I’ve taken myself up on that dare.  The intricately layered delicacy can include thin slices of cake or just chocolate and custard and cream, but it will deliver the powerful chocolate flavor you’ve been hankering for all week.  Here’s a version that not only cuts out the cooking but allows you to keep your diet on track as well!

For the crust, mix almond flour with cocoa, coconut, and diet sweetener.  Press this into the pan and layer with a mixture of cream cheese, almond milk, whipped cream, and diet sweetener.  Low carb or sugar-free chocolate pudding serves as another chocolate layer, and the lasagna is finished with whipped cream and elegant chocolate curls.

No Bake Pumpkin Spice Layered Dessert

Pumpkin Spice Pie

Garnished with melted caramel and filled with layered custards, this dessert brings the home-baked autumn goodness without the harried hours in the kitchen multi-tasking to get everything ready to serve around the same time.

Contrary to pumpkin’s associations in our minds with over-indulging at harvest time, it’s actually highly nutritious, with heaping helpings of vitamin A and antioxidants.  Over a graham cracker crust, spread a mixture of vanilla pudding, canned pumpkin, whipped topping, and those wonderfully aromatic pumpkin pie spices.

Next up is a creamy vanilla pudding layer and then a final spread of whipped topping and the garnish caramels are melted with hot milk and drizzled over the top.

Chocolate Éclair Dessert

Chocolate Éclair

Golden puffed pastry brimming with vanilla-scented custard and smooth chocolate icing on top transports you to a French patisserie.  Alternately you can don your beret while constantly stirring an egg custard over the stove and checking your pastries in the oven to be sure they don’t bake past the beautifully browned point.  This recipe gives you those same flavors and textures with an amazingly convenient process that takes a fraction of the time.

Graham crackers stand-in for the crisp pastry, and you don’t even have to crush them before laying them down as a bottom crust.  You’ll spread out two layers of the crackers and vanilla pudding mixed with whipped topping to mimic pastry cream and top with chocolate icing.

Incredible Whipped Apple Pie

Whipped Apple Pie

Of all the desserts you wouldn’t think there would be a viable shortcut version of, apple pie just about tops the list for the definition of home-baked family ambiance that has no substitute.  And yet, you can encapsulate fresh apple flavor in a creamy whipped filling over a hearty pie crust in a quick and easy process that doesn’t have to involve your oven or slaving for hours over it.  Here’s a recipe for no bake apple pie that uses an inventive method for thickening the sauce for fruit filling.

An envelope of unflavored gelatin sprinkled over apple juice and then mixed with more heated juice will make a glaze that is beaten with whipped topping and canned apple pie filling for a big home-baked flavor.  You can use a graham cracker crust or any kind of no-bake pie crust.

Strawberry Pretzel Dessert

Crunchy Strawberry Pretzel

When I was growing up this was usually billed as a healthy dessert, so there were always some in every gathering who were waiting for a special occasion indulgence and avoided this dessert altogether in favor of others.  Those of us who knew what they were missing would silently exult in the fact that that left more for us.

The sugar-and-salt crunch of the pretzel crust brings a more palpable salty taste to pair with the strawberry gelatin, and those layers teamed with rich cream cheese in between make for an inspired combination that I fell hard for the first time I tried it.  And this from someone who used to be one of that group who would choose chocolate over everything.

Golden Oreo No Bake Dessert

Golden Oreo Pudding

This layered no bake pudding dessert seems to have originated from a TikTok video.  Whatever the case, I love white chocolate so that alone was enough to lure me in.  The cookie crust combines crushing golden Oreo sandwich cookies with white chocolate chips and butter or pulsing it together in the food processor.

For the cream cheese layer, mix softened cream cheese with confectioners’ sugar and whipped topping, and this will form the second tier.

The top layer is a delectable cinnamon pudding made from boxed vanilla pudding and quite a bit of cinnamon to be dispersed throughout.  Whipped topping is spread on top, and then the dessert is garnished in white chocolate curls.

Peppermint Marshmallow No Bake Dessert

Peppermint Marshmallow With Chocolate Cookie

Peppermint, chocolate, crunch, and fluffy, creamy custard—all without having to bake.  This recipe takes advantage of the amazing texture of marshmallows.  Their sweet, light softness melts down to coat crunchy rice cereal in Rice Krispie Treats or puffs up in s’mores over the campfire.

For this dessert, eschew time-consuming baking and stovetop cooking and microwave marshmallows, milk, and peppermint extract in increments of time, pausing to stir which will decrease the size.  The fragrant mix will smooth out to a custard which is spread atop a chocolate cookie crust.  No need to wait for the holidays just because it’s peppermint!

No Bake Butterfinger Cream Pie

Butterfinger Cream Pie With Whipped Cream

The satisfying crunch of Butterfinger candy bars brings cravings from young children and adults alike, and looks rich and inviting crushed and sprinkled on top of this custard pie which is so quick and easy to make!

Butterfinger bars consist of butter and sweetened roasted peanut mixture inside with the consistency of crisp, toffee-like flakes, enrobed in chocolate.  This very unique candy goes into the middle creamy layer of pie and decorates the top layer as well.

The crust is made of chocolate cookies, and the custard is a mix of cream cheese, sugar, and whipped topping, flavored with both vanilla and almond extracts.

Lemon Cream Cheese Pudding Dessert

Lemon Cream Cheese Pudding

Tangy lemon desserts are loved all year long but see a rise in popularity during the summer when the warm air makes people want to eat light and avoid feeling overstuffed and overheated.

It’s the same time of year when everyone is prone to finding excuses not to use the oven, putting together fresh summer salads, and enjoying long, hot days.  This 3-layer dessert uses a graham cracker and butter crust for its base and vanilla pudding, cream cheese, and lemon zest for the custard layer.

Spread whipped topping over the top and decorate with lemon twists made out of paper-thin slices and delicate sprinkles of remaining graham crackers.

Blueberry Angel Dessert

Blueberry Angel Cake

A light and summery dessert that makes use of juicy blueberries, this no bake dish takes advantage of the light sweetness and ease of angel food cake as a type of base or crust instead of a crumb mixture.

The airy cake is cut into tiny cubes and lightly mixed with the cream layer.  You’ll combine cream cheese, whipped topping, and confectioners’ sugar until smooth and gently fold in the cake before spreading in the pan.  Blueberry pie filling tops the cream layer.

Punch Bowl Cake

Strawberry Punch Bowl Cake

This beautiful trifle comes together in a flash, and the flavor combination is refreshing and light yet really hits the spot as far as satisfying rich dessert cravings.  You’ll make a simple yet impressive strawberry sauce by crushing strawberries with sugar and adding in some whole ones for texture.  Create variegated layers with cubes of angel food cake, strawberry sauce with more whole berries added, vanilla pudding, drained pineapple chunks, sliced bananas, and freshly whipped cream.

Repeat these layers for a tall and gorgeous trifle and top with a few strawberries.

Swiss Roll Layered No Bake Dessert

Swiss Roll Cheesecake

Little Debbie snack cakes really do have a way of cementing their status in our hearts as childhood favorites, attached to lots of memories.  This no bake recipe uses sliced Swiss Cake Rolls for the crust and a few more as a garnish on the upper layer.  The middle layer calls for no bake cheesecake prepared from a boxed mix, and then some chocolate pudding to play up the chocolate in the snack cakes.

Whipped topping or fresh whipped cream goes on top of that, with a few chocolates and cream Swiss roll cross-sections to hint at the pleasures beneath.

No Bake Cappuccino Dessert

Cappuccino Cheesecake

The coffee flavor pairs perfectly with chocolate, underscoring it with more richness and bittersweet depth.  This no bake layered cheesecake also showcases how well coffee partners with creamy confections like cheesecake.  The bottom layer is made up of whole graham crackers that absorb the custard and become a crust.

For the cream layer, whip together chocolate pudding, cream cheese, instant coffee granules, and a cup of strong-brewed coffee that has cooled.  Add whipped topping and a pinch of cinnamon.  This will make enough for a cake with at least 2 of these layers.

Decorate the top with more cinnamon and some chocolate garnish.
