Many people who cannot stand very hot and spicy meals can tolerate jalapeno peppers.  One of the very favorite hot peppers of many Americans, jalapeno peppers are a thick fleshed pepper that is usually bright green and cheerful.

It is about 3 inches long and can be mixed into a wide variety of recipes. In the United States, most jalapenos are grown in Mexico.  You can  get jalapenos in green or red.

The red peppers are the more ripe version of the same fruit. They are a bit sweeter than the green version and less hot.

  • 4 pieces boneless skinless chicken breasts
  • Salt
  • Pepper
  • 4 oz cream cheese softened at room temperature
  • 3 pieces jalapenos sliced into thin slices
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 1 tsp minced garlic
  • 2 tbsp bacon bits


  • Preheat the oven to 400 degrees. 
  • Using a very sharp knife and a cutting board, cut five horizontal slices into each chicken breast, taking care not to slice all the way through the chicken breast. Line a baking pan with aluminum foil and transfer the chicken to the pan. Salt and pepper the chicken all over.

  • In a medium bowl, blend together the softened cream cheese, the cheddar cheese, the mozzarella, and the garlic.

  • Stuff the chicken breasts with the cream cheese mixture and tuck slices of jalapenos into the slits as well. Finally, sprinkle the bacon bits on the top of the chicken breasts, pressing the bacon into the cream cheese so that it will stick to the cream cheese.
  • Bake the chicken for about 25 minutes or until the chicken is fully cooked. If you have a meat thermometer, it should test at 165. Let the chicken cool for about five minutes before you remove it from the pan with a spatula and serve it.

Another thing that can help you learn to tolerate jalapeno peppers is to pair them with a dairy product. Milk and milk products contain a protein that is called casein. Casein helps break down capsaicin on a molecular level so that the hot pepper oils don’t stick so much to the inside of your mouth.
That is one reason that this recipe is a great one for those who are sensitive to heat. The cream cheese helps mitigate the effects of the capsaicin in the jalapeno peppers. 
This recipe for Jalapeno Popper Chicken takes its inspiration from an appetizer called Jalapeno Poppers. In this classic recipe, jalapeno peppers are hollowed out. The hollow of the pepper is filled with a cream cheese mixture and the whole pepper is baked. 
The appetizers are often served at sports parties and can be ordered at Tex-Mex restaurants.
The jalapeno popper was invented in 1992 by Appleton Foods, making 2022 the thirtieth anniversary of the jalapeno popper. The original snack featured jalapeno peppers stuffed with cream cheese and cheddar cheese. The whole snack was breaded and deep fried, making a crispy, creamy, spicy snack.
