Yes, of course, honey, being a sweetener, is high in carbohydrates, but did you know that it also has many beneficial properties? Honey, since it is created by bees from plant compounds, has many antioxidants, those special components of plants that fight cancer and promote health in the human body. Antioxidants can reduce the risk of heart attacks and strokes as well, and it also has been shown in some studies to reduce high blood pressure and promote healthier cholesterol levels.

Ingredients
  

Cookie Dough Ingredients

  • cup Coconut Oil
  • ¾ cup Sugar
  • cup Honey
  • 1 pc Egg
  • 1 teaspoon Vanilla
  • cups All-Purpose Flour
  • 2 teaspoons Baking Soda
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon

Sugar Cinnamon Coating Ingredients

  • 1 tbsp Sugar
  • 1 teaspoon Cinnamon

Instructions
 

  • Preheat your oven to 350 degrees.
  • In a large mixing bowl, stir together the oil and the sugar. If the coconut oil is solid, run the jar under a stream of warm water from your kitchen sink to melt it. 
  • Stir in the honey, the egg, and the vanilla, mixing it well with a wooden spoon.
  • In a separate bowl, stir together the flour, the baking soda, the salt, and the cinnamon. Mix these well.
    The dry ingredients are mixed in a separate bowl.
  • Add the dry ingredients to the large bowl containing the coconut oil, honey, and sugar mixture. Stir well, until they are all fully blended. Refrigerate this bowl for about 15 minutes so that the coconut oil will firm up, and you can roll the mixture into balls. 
  • In a small bowl, stir together the sugar and the cinnamon.
  • Scoop out one tablespoon blobs of dough, rolling them into balls with your hands. Roll these balls in the cinnamon sugar mixture, coating them fully in the mixture. Put the cookie balls two inches apart on your baking sheet.
  • Bake the cookies for about 8 to 10 minutes, or until they are lightly browned around the edges.
  • Scrape the cookies off the pan with a spatula and put them on wire racks to cool for about 20 minutes before storing them in an airtight container for up to a week.

Honey also has antibacterial properties. These properties make it a wonderful dressing for wounds. Scientific studies have shown that wounds treated with honey heal faster than many other antibacterial treatments. 
Honey is also useful as a cough suppressant for children. Some studies have shown that honey given to children with upper respiratory illnesses works as well as some common cough suppressants.
Most of the honey that you will find in retail stores is pasteurized honey. That is, the honey has been heat treated to eliminate the possibility of pathogens or bacterial contamination. However, if you can find raw honey, you will find even greater benefits to your health. Because honey is made from energy rich pollen, it contains something amazing called phytonutrients. These amazing compounds help protect plants from harmful ultraviolet radiation. Raw, or unpasteurized honey has greater levels of phytonutrients since it is thought that processing the honey destroys the phytonutrients. 
If you can find local, raw honey, you may find that your allergies improve. The honey that is made by bees in your area is created from plants that are blooming in your area and probably are causing your drippy nose and itchy eyes. Consuming honey made from these plants slowly acclimates your system to these bits of plant materials, hopefully reducing the allergic reaction of your body to the pollen in your area. 
One thing of which to be cautious when you are using honey, is to never give honey to very small children. Kids under the age of one year can be vulnerable to infantile botulism, a neurological illness caused by bacteria sometimes found in honey. After the age of 1, kids will outgrow their sensitivity to the bacteria, and you can give them honey without worries. This bacteria may be present even in baked goods, so these cookies are not a good choice for children under age 1. Commercially made products that include honey have processed the honey to kill the bacteria, so they are safe for babies.
This recipe includes coconut oil instead of butter. Coconut oil is a plant based fat that can improve cholesterol levels, reduce levels of stress, and possibly prevent liver disease. This fat is solid at room temperature, but it has a very low melting point, becoming liquid quite easily. To measure out your coconut oil, you can run hot water over the jar or leave it out in a sunny patch on a warm day. Then just pour the coconut oil into your measuring cup to measure it.
