Put the three tablespoons of olive oil in the bottom of a 3 quart saucepan. Heat the oil over medium heat and when it is hot, add the garlic to the oil. Sautee the garlic until it is golden brown.
Pour the rice into the hot oil and turn it to coat it all over with oil. Continue to cook the rice for a minute or two longer, stirring all the while.
Zest the lemon into the rice and add the juice of the lemon to the pan. Stir in the dried oregano and the onion powder.
Add the warm chicken broth.
Turn the heat up to bring the pot to a boil, and then reduce the heat to low and simmer it. Put the lid on the rice and continue to simmer it for about 15 minutes.
Take the pan from the heat and let it sit covered for about 5 minutes. Squeeze the remaining lemon over the rice and taste it, adding salt and pepper as needed. You may need to stir it to distribute the seasonings into the rice.
Add the chopped fresh oregano and the chopped fresh parsley to the rice and finish the dish with a splash of olive oil.
Serve the rice, hot.
In the United States, many people make tastier rice dishes by buying pre-packaged rice mixes. These boxes or bags of rice include the rice, dried herbs and veggies, and sometimes dehydrated cheeses. All a person has to do is boil water, dump the rice into the pot, and stir. The lid is put on the pot and it is simmered for a few minutes. Like magic, in less than 15 minutes, a tasty side dish can be ready to go on the table to go along with the meat or vegetables. There are a few downsides to this way of cooking rice. First of all, these prepackaged rice boxes are generally loaded with certain unhealthy things. Usually, there is an unhealthy amount of sodium in each serving, and it’s not unusual for artificial ingredients and preservatives to be in them as well. While many people like the flavors of these dishes, the extra ingredients are not the healthiest choice for most people. Another not so great thing about these packets is that they are, ounce for ounce, more expensive than creating your own rice dish from scratch. While they may seem cheap, only costing a dollar or two for a packet, when you compare the cost of a whole large bag of rice and the ingredients to make it into a tasty side dish, you will quickly learn that they cost more than you’d expect.Recipes like ours for Greek Style Rice can help you make a rice dish that tastes great for a small amount of money. You probably already have many of the herbs and seasonings on hand, and a large bag of long grain rice only costs a few dollars. The flavors will be fresh and delicious and you will be in control of the sodium level. Additionally, you will know for a fact that there will be no artificial ingredients or flavorings in your meal. Tasty, wholesome food is within reach for almost everyone if you take the time to cook from scratch. And in reality, it doesn't take much longer to make this kind of a recipe than it does to create a packet of pre-made rice mix. This recipe has wonderful flavors. The herbs include oregano, garlic, and parsley. You’ll also include some onions. If you prefer to have more onion flavor, you can chop a whole onion finely and saute it in the oil before you add the garlic. This will add an interesting twist to the recipe. If you use a fresh onion, be sure to omit the onion powder.
