- 2 cups Frozen Chopped Broccoli
- 1 teaspoon Minced Garlic 2 cloves
- 1 tbsp Olive Oil
- 2 cups Chicken Broth
- ½ teaspoon Onion Powder
- ½ cup Heavy Cream
- 1½ cups Shredded Cheddar Cheese medium sharpness
Cook the broccoli according to the package instructions and drain any cooking liquid from the broccoli. Set the broccoli aside.
In a medium-sized saucepan, heat the olive oil over medium heat. Add the garlic and cook for about a minute, stirring it frequently, until the garlic is golden brown and fragrant.
Next, add the chicken broth, onion powder, and heavy cream. Heat these together with the garlic, stirring frequently, over medium heat.
When the broth and cream mixture is steaming, reduce the heat to low. Add the shredded cheese a little at a time, stirring frequently. Continue to heat this mixture over medium heat, stirring until the cheese is melted. When the cheese is melted, stir about two-thirds of the broccoli into the pot.
Use a stick blender to purée the remainder of the broccoli into a pulp. You may want to add a little water if it will not purée very well.
