  • Medium-Sized Saucepan
  • Stick Blender
  • Spatula

  • 2 cups Frozen Chopped Broccoli
  • 1 teaspoon Minced Garlic 2 cloves
  • 1 tbsp Olive Oil
  • 2 cups Chicken Broth
  • ½ teaspoon Onion Powder
  • ½ cup Heavy Cream
  • cups Shredded Cheddar Cheese medium sharpness

  • Cook the broccoli according to the package instructions and drain any cooking liquid from the broccoli. Set the broccoli aside.
  • In a medium-sized saucepan, heat the olive oil over medium heat. Add the garlic and cook for about a minute, stirring it frequently, until the garlic is golden brown and fragrant.
  • Next, add the chicken broth, onion powder, and heavy cream. Heat these together with the garlic, stirring frequently, over medium heat.
  • When the broth and cream mixture is steaming, reduce the heat to low. Add the shredded cheese a little at a time, stirring frequently. Continue to heat this mixture over medium heat, stirring until the cheese is melted. When the cheese is melted, stir about two-thirds of the broccoli into the pot.
The cooked broccoli is added into the broth.
  • Use a stick blender to purée the remainder of the broccoli into a pulp. You may want to add a little water if it will not purée very well.
  • Stir the broccoli purée into the soup and heat through. Serve this soup topped with croutons and offer red pepper flakes as a topping as well for those who want to spice up their soup.

  • Store leftovers in the refrigerator in a container that has a tightly fitting lid. This soup reheats best in a pot on the stove, rather than in the microwave. Reheat it on medium-low heat, stirring frequently to avoid scorching.

When winter starts getting long, cold, and dreary, this cheerful soup can brighten your table. Not only does it taste delicious, but it looks great too. Along with all of that, this soup features broccoli, a cruciferous vegetable that is packed with nourishment. Broccoli is one of those vegetables that you just can’t get enough of. Nutritionists recommend that people get at least two servings of dark green vegetables every day, and broccoli fits that category.
Broccoli is a very low-calorie food, with only 30 calories per cup of this vegetable. It has 2.3 grams of fiber per serving, and lots of Vitamins C and K. Also, broccoli can add iron to your diet, as well as folate and potassium. Broccoli has more protein than many other vegetables, at 2.6 grams of protein per cup of broccoli.
Our recipe features cheddar cheese. This cheese has a tangy flavor that many people love. We used a cheese of medium sharpness to add a lovely rich flavor to the broth. If you prefer a milder flavor, you can definitely use mild cheddar cheese. If you want to kick up the flavor in the soup, go bold and use sharp cheddar cheese.
Many people like a bit of texture with their soup. This soup begs for the addition of oyster crackers or a thick Caesar-style crouton. However, if you want something a little more hearty, buy a loaf of garlic bread or Texas toast available in the freezer department of your local grocery store. These frozen bread are a quick and easy way to add a filling, savory bread to your table. Additionally, your kitchen will smell amazing as you bake them.
If you don’t have a stick blender, you can definitely use a blender instead to purée the broccoli. However, if you don’t have either, no worries! Feel free to skip the step of puréeing the broccoli. Your soup will be a little lighter in texture, but it will still be absolutely delicious.
