Broccoli and Cheese Soup Recipe

- 2 cups Frozen Chopped Broccoli
- 1 teaspoon Minced Garlic 2 cloves
- 1 tbsp Olive Oil
- 2 cups Chicken Broth
- ½ teaspoon Onion Powder
- ½ cup Heavy Cream
- 1½ cups Shredded Cheddar Cheese medium sharpness
Instructions
- Cook the broccoli according to the package instructions and drain any cooking liquid from the broccoli. Set the broccoli aside.
- In a medium-sized saucepan, heat the olive oil over medium heat. Add the garlic and cook for about a minute, stirring it frequently, until the garlic is golden brown and fragrant.
- Next, add the chicken broth, onion powder, and heavy cream. Heat these together with the garlic, stirring frequently, over medium heat.
- When the broth and cream mixture is steaming, reduce the heat to low. Add the shredded cheese a little at a time, stirring frequently. Continue to heat this mixture over medium heat, stirring until the cheese is melted. When the cheese is melted, stir about two-thirds of the broccoli into the pot.
- Use a stick blender to purée the remainder of the broccoli into a pulp. You may want to add a little water if it will not purée very well.
- Stir the broccoli purée into the soup and heat through. Serve this soup topped with croutons and offer red pepper flakes as a topping as well for those who want to spice up their soup.
- Store leftovers in the refrigerator in a container that has a tightly fitting lid. This soup reheats best in a pot on the stove, rather than in the microwave. Reheat it on medium-low heat, stirring frequently to avoid scorching.
