Ingredients
  

Seasoning Mixture Ingredients

  • 1 tsp onion powder
  • 1 tbsp dried oregano
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tbsp cumin

Enchilada Sauce Ingredients

  • 2 tbsp cooking oil
  • 4 tbsp flour
  • 2 cups chicken broth
  • 1 8 ounce can of tomato sauce
  • ¼ tsp salt
  • ¼ tsp pepper

Beef Filling Mixture

  • 1 tbsp cooking oil
  • 1 tsp minced garlic
  • 1 tsp onion powder
  • 1 lb ground beef
  • 1 14 ounce can of refried beans
  • 1 14 ounce can of black beans
  • 8 tortillas
  • 1 ½ cups cheese
  • Several sprigs of cilantro chopped

Instructions
 

  • In a small bowl, stir together the onion powder, garlic powder, cumin, paprika, and oregano to create the seasoning mixture. Set this to the side, while you create the enchilada sauce.

  • In a large saucepan over medium heat, heat the oil until it shimmers. Add the flour and stir it together with a spatula until you make a paste. Cook the paste until it is lightly browned and bubbly. This should take about a minute.

  • Stir it constantly. Add half of the chicken broth, whisking it into the paste until smooth. Whisk in the rest of the chicken broth, the tomato sauce, the salt, and the pepper. Turn the heat up just a bit and add 2 tablespoons of the seasoning mixture that you created before. Continue to cook the enchilada sauce for about 5 minutes, stirring frequently, until the sauce is thick and bubbly. Take the sauce off of the heat and set it aside.

  • Turn your oven on to preheat to 350 degrees Fahrenheit.
  • As the oven is heating, you will prepare the enchilada filling. Heat the one tablespoon of cooking oil in a large skillet over medium heat until the oil is hot and shimmering. Add the garlic and cook it for about 60 seconds until the garlic is golden brown. Add the beef and cook it for about 2 minutes, chopping the meat with a spatula and turning it. Add the rest of the seasoning mixture to the beef and continue cooking the meat until it is fully browned and no more pink remains. Drain any accumulated grease from the pan.

  • Stir in the refried beans and the black beans, stirring the mixture to break up the refried beans and combine the mixture. Add about ¼ cup of the prepared enchilada sauce along with the salt and pepper. Cook the mixture for about 3 minutes. Take the pan off the heat and set it aside.
  • Now you will assemble the enchiladas.
  • Take a nine by thirteen inch baking pan and spread a couple tablespoons of the enchilada sauce on the bottom.
  • Place a tortilla on a plate. Put one eighth of the filling mixture on the bottom third of the tortilla and roll up the tortilla.

  • Place it in the baking pan, seam side down. Repeat this with the rest of the tortillas and the rest of the filling mixture.

  • Pour the remainder of the enchilada sauce over the tortillas. Sprinkle the cheese over the top of the casserole and cover it with aluminum foil.

  • Bake it in the oven for about 10 minutes with the foil on top. Remove the foil and bake for an additional 15 minutes. Sprinkle with cilantro. Serve the enchiladas piping hot with a side of chips and salsa.

Notes

Burritos
While burritos can vary from one area to the next, a traditional burrito from Mexico consists of a flour tortilla wrapped around one or two fillings, and usually one of them is beans. However, in most of the world, a burrito is a flour tortilla with piles of fillings, including veggies, guacamole, cheese and meat. The burrito is usually wrapped in foil and eaten with the hands.
Fajitas
Fajita is actually the term for the meat served with this dish. This meal consists of grilled meat, like chicken, beef, or pork, that is served with charred veggies like tomatoes, onions, and peppers. Usually, the tortilla is served on the side and other fillings like rice and beans are served together with the fajita meat.
Quesadillas
Quesadillas is a simple Mexican dish that consists of a tortilla filled with cheese and sometimes meat and other spices. The tortilla is grilled or toasted to allow the cheese to melt and the tortilla to be slightly crispy.
Enchiladas
Enchiladas are similar to burritos because they consist of a tortilla with a meat and bean filling. However, with an enchilada, the tortilla and its fillings are served on a plate and smothered in a sauce. The whole thing is likely topped with melted cheese.
