Everyone needs recipes that are quick and easy to prepare and make a minimal mess. This recipe does just that. There are no complicated steps or messy piles of dishes to clean up with this recipe. Just chop the veggies, cook them for a bit in the air fryer, toss them in oil again and add the seasonings. Even a child can learn to prepare this delicious side dish for the family using the air fryer.

Equipment

  • 1 Air Fryer
  • 1 Sharp knife
  • 1 Cutting Board
  • 3 Mixing bowl
  • 1 Dinner Plate

Ingredients
  

  • 3 pcs medium red or yellow potatoes with the skins on
  • ½ pound baby carrots halved
  • 2 tbsps olive oil
  • 1 tsp sea salt
  • 2 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • ¼ tsp ground thyme

Instructions
 

  • Preheat your air fryer to 400 degrees for about 5 minutes.
  • As the fryer is heating, wash your potatoes and carrots. Leaving the peels on the potatoes, chop them into bite-sized pieces.

  • Put the pieces in the bowl along with the halved carrots. Toss these in one tablespoon of olive oil. 
  • When the fryer is hot enough, put the potatoes and carrots into the basket.
  • Cook the veggies in the air fryer at 400 degrees for about 15 minutes.
  • Open the air fryer about halfway through the cooking time and shake the carrots and potatoes to rotate all the pieces and ensure even browning.
  • While the potatoes and carrots are cooking, put the thyme, garlic powder, salt, paprika, pepper, and oregano in a small bowl. Stir these herbs and spices together to combine them.

  • After the potatoes and carrots have cooked for the initial 15 minutes, remove them from the air fryer and dump them into a bowl.

  • Toss the half-cooked veggies with the remaining tablespoon of olive oil.
  • Then, add the seasoning blend, turning and stirring gently to coat the pieces evenly with the seasoning.
  • Return the veggies to the air fryer and cook them for another 10 to 12 minutes, checking the basket after about 8 minutes.
  • When the potatoes and carrots are fork-tender and a light golden brown, they are ready.
  • Serve the roasted potatoes and carrots piping hot.

Notes

Air fryers have changed the way that many people cook on a regular basis. Rather than preparing dinner becoming a half-hour to the forty-five-minute ordeal, foods cook up quickly and easily in an air fryer. The top of the air fryer has a heating element and a fan.
When you turn it on, the heated air circulates rapidly around the food in the basket, cooking it very quickly. Additionally, the food in the basket browns quickly and crisps up nicely. You can have all kinds of food with a deep-fried texture while only using a spoonful of oil. 
Air fryers are also much more energy-efficient than using an oven. Just consider that to roast potatoes and carrots in the traditional way, you have to heat up the whole oven. This might not be as big of a deal if you are preparing six or eight servings. But for three or four servings, heating up the entire oven is a waste of electricity. Having an air fryer to help you cook can save you a bit of money on your electric bill. 
One tip for using your air fryer to cook vegetables--be sure that you cut your carrots and potatoes close to the same size. If they are drastically different in size, the pieces will cook at different rates in the air fryer. Some of the smaller bits will be overcooked and hard, while the larger chunks will not be fully cooked in the middle. Uniform sizing will help everything cook evenly.
You can choose to use red or yellow potatoes in this recipe. Both yield tasty and beautiful results. When we prepared this recipe we chose to leave the skins on. This adds nutrition and a more interesting texture to the recipe. However, if you have someone in your family who has strong feelings about the texture of potato skins, feel free to peel the potatoes before you cook them.
Our recipe for Air Fryer Roasted Carrots and Potatoes is a warm, savory side dish. It pairs well with a pot roast or even a rotisserie chicken that you grabbed at the supermarket on the way home. Just add a cooked green vegetable, like green beans or peas, and a loaf of Italian bread with some herb butter, and you will have a feast fit for a king.
